The Jerusalem artichokes in the West Indies are not often seen in the markets but can be cultivated the year round in the islands, usually running smaller in size than those grown in temperate climates. They make an acceptable substitute for any of the starchy vegetables that you don’t want to include in the Jamaican Recipes.

How to cook this vegetable to bring out the correct taste:

Wash or peel and drop into boiling water. Cover and cook until just tender. Add salt iust before removing from the stove. Drain, add butter, lemon or lime juice, finely chopped parsley, and salt to taste. Toss together and serve.
